My boss is in Hawaii this week while I’m stuck back at work filling in for him. So while I slave away on those TPS reports, I’m going to drink this green smoothie in honor of him and pretend I’m somewhere tropical also.
One of the great things about this green smoothie is that it uses fruit that can be found fresh at the farmer’s market during the summer; or in the frozen section at the grocery store during the winter. So you can enjoy a little tropical flavor all year round.

Tropical Green Smoothie
Instructions: Blend spinach and coconut milk until smooth. Add remaining ingredients and blend again. Drink up!
- 1 cup baby spinach
- 1 cup pineapple chunks (fresh or frozen)
- 1 cup mango chunks (fresh or frozen)
- 1 banana (fresh or frozen)
- 6 strawberries (fresh or frozen)
- 1 cup coconut milk
- 1 teaspoon vanilla extract
